Why We Love This Wine
The Carillon family has been making wine in the village of Puligny-Montrachet since the 16th century beginning with Jehan Carillon, who was a vintner in Puligny in 1520. Jacques Carillon joined his father in the family vineyard in 1980 and in 2010, he & his wife Sylvia founded the Jacques Carillon vineyard with 5.25 hectares of vines, primarily in the village of Puligny-Montrachet. Every wine that they sell is made exclusively from grapes grown in their own vineyard. The clay-limestone soils here, typical of Burgundy, nourishes their vineyards. The region's geography, climate, & geology make it ideal for cultivating Chardonnay & Pinot Noir vines, the primary grape varieties here. Puligny shares the distinction of "most perfect Chardonnay" with the villageof Chassagne-Montrachet. Straw yellow in color, the nose opens up with fresh fruit aromas of pears & apples with added hints of fresh herbs, vanilla spice, and oak wood. On the palate, it is buttery, well-rounded, & smooth with a full body, firm structure, & vibrant acidity culminating in a dry, elegant finish. Pair this wine with Cheesy Baked Mussels, Oysters Rockefeller, Vongole Pasta, Fettucine Alfredo, Prawn or Lobster Thermidore, Emmental or Port Salut Cheese, Jamon Serrano, and Spanish Chorizo.
