Since 1920, when Arsene & Flavie Amiot 1st founded the estate until the 4th generation which now oversees the domaine, the Amiot family have plunged their roots deep in the soil & terroir of Chassagne-Montrachet. This allows for a more traditional viticulture with a unified winemaking philosophy free from outside influences. Planted in the years 1920 to 1930, their vines of Chardonnay & Pinot Noir grapes allow limited yields annually resulting in greater concentration of flacvor in the berries. Great care is given to these ancient vines from pruning to harvesting to eloquently express the true terroir identity of each plot. This wine showcases fine aromatic layers of lemon citrus followed by intense dried apricot & peach fruit characters. Pair this wine with Chicken in a Creamy Sauce, Sous Vide Crawfish in Ginger, Butter, & Pepper, Seafood Risotto, and Brie or Camembert Cheese.
The pure mineral dominance of Puligny is clearly revealed here. The southeast exposure and the slope topography together with the wine age bring a singular richness to this wine. The depth is substantial & lingering with fine aromatic layers of fresh lemon notes followed by more intense dry fruit notes. The subtle flesh requires a few more years of bottle ageing to fully reveal all its complexity in a more concentrated fashion.
