My homeland has a unique terroir: layers of silts from the bounty of the Yellow River blended with rocks and gravel brought down from the Helan Mountains. Ningxia's high altitude amplififes the intensity of sunshine by day and receives cooling mountain breezes at night. Silver Heights represents the story of my family, with deep roots in local agrarian traditions while embracing innovations from biodynamic viticulture. Using minimal intervention to produce select quantities of each cuvee, our mission is to create the finest artisanal wines of China.
Fresh raspberry, strawberry yogurt, and slight vanilla notes on the nose. On the palate, concentrated acidity and fine tannins are the first characters to notice. Clean and long finish with luscious flavor of blueberry, hazelnuts, and milk ice cream. Pair with Tomato Beef Stew, Stone Pot Rice, Mushroom Dumplings, and Suckling Lamb.
Why We Love This Wine:
This low intervention Pinot Noir from Ningxia, China displays a pale ruby color that is a bit cloudy due to the wine making technique (wild fermented, unfiltered). The aromas initially showed red fruits, tomato sauce, umami, dried sour plum candy, strawberry jam, meat, and guava. It is dry, with medium to high acidity, light body, and light soft tannins. It showed more acid and fruit, while a bit of funk and savoury is apparent mid palate. Pair with Spicy Tuna Sashimi, Scallion Pancake, or Salad with Strawberry Vinaigrette.
