95% Negro Amaro and 5% Bonvedro (organic), Barmera
Nego Amaro split between 2 separate fermenters. One fermented on skins for a month. The other carbonic ally macerated for 2 weeks. Fermenters racked and pressed in a single puncheon filled with CO2 Matured for 2 years.
