Ferment #1: 100% whole berry destemmed with 2 weeks pigeage. Followed by 6 months on skins.
Ferment #2: 80% whole cluster over 20% carbonic. 4 weeks on skins post carbonic.
Ferment #3: 100% whole berry destemmed with 3 weeks pigeage. Followed by 8 months on skins.
The free run fractions are racked to stainless before racking to a single new Francois Freres Puncheon.
Followed by 13 months elevage on full solids. Followed by 10 months bottle maturation.
