One of Chile's most famous wines, Carménère is a medium-bodied red wine that is reminiscent of Cabernet Sauvignon. Originating in Bordeaux, France, Carménère was a finicky grape and was thought to be extinct after phylloxera infestation. However, the grape — mistaken for Merlot until 1994 — had been brought over to Chile in the 1880s. The grape flourished here thanks to a warm weather climate, which extended the growing season needed for Carménère to fully ripen. As the grape is part of the Cabernet family, you should expect to taste a distinctive green pepper note from the pyrazine compounds. However, this is balanced by abundant flavors of plum and cherry.
